A Preserved Delicacy

LOWER EAST SIDE—During a rare break, Niki Federman grabs a bagel with cream cheese and lox and a lime green can of Dr. Brown’s Ginger Ale. Federman eats from her shop, Russ & Daughters, every day. Usually, she has lunch upstairs in her apartment, away from the bustle of the store. Still, she can smell the rugelach being baked in the shop’s kitchen – just like her grandmother used to.
